When always preparing charlotte, I didn’t have enough acid, although I usually took sour apples, but I still wanted something else and yesterday I decided to add tangerines to charlotte - I really liked the result, now I’ll tell you the recipe.

Take 5 eggs

and start whisking. My blender broke and I had to do it manually, but I think this made the dough even tastier, because manual labor was put into it)

This process is the longest and most difficult. Ideally, eggs and sugar should be white and very thick, but I usually don’t bring it to this state, because I don’t have enough patience, but nevertheless, even in the form I beat, the dough rises magnificently, is very airy and melts in the mouth)

Towards the end of whipping, add vanillin and the result should be the most airy and light mass.


While the eggs and sugar are being beaten, remove the center of the apples and cut into slices.


We divide the tangerine into slices and if we come across large slices, cut them in half


Grease the baking tray well with butter


And put apples and tangerines in random order


All this time the dough is continuously whipped.

Now you need to extinguish the soda. Pour baking soda into a tablespoon


Pour a little 9% vinegar


And wait until everything stops hissing


Slaked soda helps the dough to be more airy, porous and actively rise.

Turn on the oven at 170 degrees to warm up.

When the eggs and sugar are beaten, pour in the slaked soda and gradually add the sifted flour


And very carefully whisk the flour into the dough so that you get a thick dough, similar to thick sour cream

You need to mix as carefully as possible so as not to knock down all the bubbles from whipping and so that the dough remains as tender and airy.
Now pour the dough into the mold with fruit


Immediately place in the preheated oven for 30-35 minutes. The cake should rise about 2-2.5 times. In this photo I took the photo too early when I was checking the degree of doneness with a toothpick, but the cake should have the same color or a little darker, in fact, my dough was much higher than the shape


Once there is no raw dough left on the toothpick, it means it’s ready, immediately turn it hot onto a plate and this is what happened


The tangerine did not add excess liquid, and the cake rose well and became airy, and the tangerine also gave sourness and an interesting flavor. This was my very successful experience, which my men liked)
