Grated pie for tea with jam. Grated pie with jam. Step-by-step recipe with photos. With apricot jam

Only homemade baked goods can be delicious. What to do if you have very little time to prepare, but you want to get together with the whole family over a cup of tea and a slice of fragrant pie? We advise you to prepare grated pie with jam according to the traditional “Soviet” recipe.

Classic recipe for grated pie

Grated pie according to the classic recipe is prepared quickly and easily. In about an hour it is ready and you can sit down and drink tea. In order to prepare it you will need products for the dough and apples for the filling. Instead of apples, you can take pears or any other fruit, but then you need to add sugar depending on their sweetness.

For the test you need:

  • a full glass of flour;
  • half a glass of semolina;
  • 100g butter;
  • ¾ cup granulated sugar;
  • a pinch of salt;
  • 2 tsp baking powder.

For filling:

  • 4 large apples.

Preparation:

  1. In order to prepare the dough, you need to mix softened butter and granulated sugar. You don’t need to grind it for a long time, just mix until smooth.
  2. You need to add semolina to this mixture and mix everything well.
  3. In a separate container, mix flour and baking powder. Flour should always be sifted immediately before cooking. Firstly, it may contain unwanted impurities. Secondly, during sifting, the flour is saturated with oxygen and the products made from it are more fluffy.
  4. Flour and baking powder should be added to the creamy semolina mixture.
  5. Grind everything with your hands or a spoon until grains appear.
  6. Next you need to prepare the filling. To do this, apples should be grated on a coarse grater and placed on a sieve to drain excess liquid. It is advisable to take unsweetened apples for the filling.
  7. The dough must be divided into 3 parts. Between the 3 layers there will be 2 layers of filling.
  8. First, a third of the total volume of dough is placed in a mold greased with oil and sprinkled with breadcrumbs. Then put half of the filling on it. Then alternate again, the last will be the dough.

The peculiarity of the grated pie is that the ingredients for the dough are not kneaded, but ground. Thanks to this, an interesting surface structure and fast cooking appeared.

Bake the pie, depending on the size and features of the oven, for about half an hour. You need to focus not on the recipe, but on the condition of the baking. From time to time it can be pierced with a dry match or a special stick to determine readiness. The oven temperature must be at least 180 ° C.

Shortcrust pastry pie

Grated shortcrust pastry pie is prepared based on the classic recipe, only margarine is added instead of butter. This does not in any way affect the final taste of the product. Rather, margarine is more suitable for preparing fluffy and rosy baked goods. This pie tastes best in the oven. You can also bake it in a slow cooker, first putting in long strips of paper to make it easier to remove.

For the test you need:

  • 2.5 cups flour;
  • 100g margarine for baking;
  • 50 g fat sour cream;
  • 1/3 cup granulated sugar;
  • 2 yolks;
  • 2 tsp baking powder.

For filling:

  • 700 g plums;
  • 1/3 cup granulated sugar;
  • teaspoon starch.

Preparation:

  1. Cut the plum in half and remove the pits. Sprinkle the halves with sugar. While the juice is being released, you can prepare the dough.
  2. After 30 minutes, drain the juice from the plums. They shouldn't be too juicy for the pie.
  3. In one large bowl, mix sugar, sour cream and softened margarine.
  4. Mix sifted flour and baking powder.
  5. Mix all the ingredients, knead the dough, divide it into 2 parts and freeze for 30 minutes.
  6. Place baking paper on a baking sheet. Grate 1 half of the shortcrust pastry using a regular coarse grater, distributing evenly over the baking sheet.
  7. Place plum halves on it in even rows, sprinkle them with starch on top so that the juice does not leak out.
  8. Place the rest of the grated dough on top of the plums.
  9. Bake the pie at a temperature of 170-180 ° C until cooked. Depending on the thickness of the pie, it takes from 25 to 40 minutes to cook.

The combination of shortcrust pastry and fruit always turns out well. But before cooking, be sure to try the filling. If plums or apples are sweet, then the amount of sugar should be reduced.

Lenten recipe without eggs

Lenten shortbread pie is made from margarine, flour, and sugar. To prepare it you don't need any milk or eggs. You can use any berries, jam, marmalade or preserves as a filling.

  3. In a large bowl, mix flour, baking powder and granulated sugar.
  4. To make the dough, grate margarine on a coarse grater directly into the flour mixture.
  5. Mix it gently with a spoon or your hands until the dough forms crumbs. If there is not enough flour, add more.

  • 2 cups of flour;
  • 100 g butter;
  • 2-3 tbsp. sour cream;

  4. After 30 minutes, roll out the larger part and put the filling on it.
  5. For the filling, mix the jam with starch (so that the filling does not leak out).
  6. Frozen dough should be grated on top using a coarse grater. The pie will turn out not only tasty, but also beautiful.
  7. Place in the oven at a temperature of 170-180 O C. After half an hour, remove and check for readiness. If the pie is not baked, then put it in the oven for another 5-10 minutes.

Delicious quick pie

This quick shredded pie recipe uses very simple ingredients. One can be replaced by another. If there are no eggs in the refrigerator, you can do without them. Part of the butter or margarine is replaced with sour cream or kefir. With the latter, the main thing is not to overdo it, so that the batter does not come out.

The filling for the quick version can be anything. You need to take what is in the refrigerator at the moment. It can be:

  • chocolate;
  • nuts;
  • jam;
  • fruits;
  • cottage cheese;
  • frozen berries.

The pie with currant jam has a slight pleasant sourness. In combination with tea with currant leaf, it goes away with a bang in winter. It can be cooked in the oven. This makes it more convenient to select the desired mode.

  • 1.5 cups flour;
  • 150 g butter;
  • 1/2 cup granulated sugar;

Bon appetit!

If you like simple and tasty pastries made from shortcrust pastry, then the recipe for grated shortbread pie with jam simply must be in your notebook or bookmarks. I have been preparing grated pie with jam for as long as I can remember, and I always add ingredients by eye, but for you, dear guests, I specially weighed all the ingredients in order to end up with a recipe that was verified down to the gram.

For grated shortbread, it is best to use jam or jam with sourness. Berry jam or apricot jam is ideal. So, meet me - grated pie with jam - a step-by-step recipe, at your service. Delight your family with delicious baked goods more often!

Ingredients needed

  • 100 gr. margarine or butter
  • 1 egg
  • 5 tbsp. sour cream
  • 5 tbsp. vegetable oil
  • 5 tbsp. Sahara
  • 1 tsp baking powder
  • 3 cups flour
  • 5 tbsp. thick jam

* glass 250 ml.

Step-by-step preparation

To make a pie from grated dough with jam, use butter or margarine. Of course, grated pie with jam on margarine will turn out cheaper, but it tastes no worse than with butter. Pour two glasses of flour into a deep bowl and grate cold margarine or butter.

Grind the flour with margarine or butter into a homogeneous dry crumb. It should look something like my photo for the recipe.

In a separate plate, combine: eggs, sour cream, sugar, and vegetable oil, as required by the recipe for grated shortbread pie with jam.

Beat all ingredients with a whisk or mixer until the sugar is completely dissolved.

Combine the sour cream and egg mixture with butter crumbs.

Add another glass of flour, baking powder and knead soft shortbread dough. The dough needs to be divided into two unequal parts, as in my photo. The larger ball will go to the bottom and sides of our grated jam pie, and the smaller ball will go to the top. Keep in mind that the smaller ball is 1/3 of the total volume of shortcrust pastry.

Attention: if you want to whip up a grated pie with jam, then the small ball that will go on the grated top of the pie with jam needs to be divided into 5-7 small fragments so that the dough hardens faster in the freezer.

Forming and baking

Place the dough in the baking pan, level it and trim the sides if necessary.

The last step in preparing the grated pie with jam will be the shortbread crumbs. We take a smaller ball of dough out of the freezer and grate the dough on top of the jam using a coarse grater. Finally, use the tip of a knife to evenly distribute the grated dough over the pan.

Hello friends! I wanted something sweet, this happens to me often. My favorite and quickest treat that my family and I love is this recipe - grated pie with jam!

I think everyone is familiar with this type of baking. Well, if not, then quickly read the article and bake pies, you will definitely like it! 🙂

Grated pie is a very tasty delicacy made from shortbread, crumbly dough, as well as filling. Why is this sweet called that? Because the top layer of such a pie is grated or crushed by hand in the form of crumbs.

The top looks very seductive and appetizing because it creates cool curls.

Now, as for the filling. Oh, I love experiments!

The classic recipe calls for a filling such as jam. Jam can be absolutely anything. I like to use currant jam the most. Try it and find your favorite taste.

But there are other types of fillings that I advise you to try too. These are:

  • condensed boiled milk, and if you add nuts or coconut flakes, I think it will be amazingly delicious!
  • fruits or berries. In winter, they can be used defrosted, these are: black currants, cherries, cranberries, raspberries, strawberries, victoria, apricots, apples, cherries, etc. Do not forget to add sugar to the berries to taste. And to prevent the berries from spreading, add starch. Important! Make high sides on the dough.

  • luxurious filling of dried fruits: dried apricots, prunes, dates, raisins, add cherries for sourness. Grind these ingredients in a blender or meat grinder.
  • cottage cheese, cottage cheese with berries, raisins.
  • apples. Cut them into slices, maybe into circles or cubes, mix with sugar, if the apples are sweet and not sweet and sour, you can sprinkle citric acid on top. You can also add cinnamon to add flavor.
  • twisted lemon with sugar and semolina. Mix everything and cook a little on the stove.

I love this dish for its simplicity and beauty!

Eaten up very quickly in our family!

If you have never baked such a pie, then this article will help you! In it you will find step-by-step recommendations with photos. And you will definitely succeed!

Classical recipe for grated pie with jam

This option is very simple, I got it from my mother. I am sure that descriptions of this dish are passed down from generation to generation. It is called “Kroshka” because the top is grated or sprinkled with dough crumbs. Do you make something like this?

I think that even if you have never made this type of pie, you have definitely tried it at least once. Have you ever wondered why some people end up with an amazingly crispy crust on top, while others have something stuck together instead of a top? There is one trick in this form that I will be happy to tell you.

We will need:

  • butter – 200 g
  • sugar 2/3 cup
  • flour – 3-4 tbsp.
  • eggs – 2 pcs.
  • baking powder - 1 tsp. (or soda slaked with vinegar)
  • vanillin - to taste
  • salt - a pinch
  • jam – 250-300 ml

Cooking method:

1. Remove the butter from the refrigerator and place in a warm place for half an hour until it becomes soft and elastic.

2. In order to get a tender dough mass, you need to mix the butter with sugar, using a fork or spoon. I use a fork.

3. Now add two chicken eggs to the mixture.

4. Stir until the consistency becomes like cream.

5. Now add flour, salt and baking powder (or soda, quench in vinegar so that there is no unpleasant aftertaste). Mix the dough thoroughly with a spoon and then with your hands. Don’t forget to sift the flour, because this will affect the cake, saturate it with oxygen, and it will turn out even tastier.

6. The result is a yellowish dough.

The dough should be elastic, like in this picture. I love fooling around with dough! She made such a face, how do you like it?

7. Divide the dough into 2 uneven parts. I always cut the dough by eye.

8. Place a small portion of the dough back into the bowl.

9. Roll out the rest of the dough and place it on a baking sheet pre-greased with vegetable oil. The dough can either be rolled out or grated. Choose for yourself what is most convenient for you. Don't forget about the sides, about 1.5 cm.

10. Pour jam onto the surface of the dough. The ideal jam is thick currant jam. If the jam is liquid, add starch to it. The picture used jam made from whole apricots.

11. Now move on to a small piece of dough. This is where the fun begins, how to make the crumble so that it is crispy and does not stick together.

12. Sprinkle 0.5 cups of flour on it. And knead the dough. The dough will have to be kneaded with force and it will even seem that it has already turned out to be crumbs, but you must knead the dough into a tight ball.

13. Now grate this dough, as you can see, the dough was not even sent to the refrigerator, as many do. Attention, do not rub the dough over the pie! Rub into a container and then spread evenly over the surface.

14. Place in a preheated oven at 180-200 degrees. If suddenly you forgot to preheat the oven, then while it is warming up, put the pie in the refrigerator.

15. Bake for about 20-25 minutes, watch the crust.

16. Cut the pie into slices in the form of squares or diamonds, triangles and treat your relatives with a delicious treat! Bon appetit! Hope you enjoyed it!

  • salt - on the tip of a knife
  • soda - 2 tsp.

Cooking method:

5. Prepare a baking sheet. Using a brush, grease the baking sheet with vegetable oil.

7. Roll out one part of the dough using a rolling pin and place it on a baking sheet. Using your fingers, smooth the dough well onto the baking sheet and make small edges around the perimeter.

8. Now it's time for jam. Pour jam onto the dough. If the jam is runny, rub a little starch onto it. You can use currant or apricot jam. In my opinion, currant is better, it gives sourness.

9. Distribute the jam evenly over the dough.

10. Take the second piece of dough and roll it out with a rolling pin, and then place it on top of the jam. Or you can grate the dough. Here, for variety, I show a version of a single rolled piece.

12. Place the pie in the oven for 20-30 minutes at about 200 degrees. Preheat the oven. This is what happened. Cut into portions. Transfer the pieces to a plate.

13. Very appetizing and incredibly aromatic! The grated pie without eggs turned out great in a hurry! Try making this simple miracle pie! 🙂

Remove the butter from the refrigerator and cut it into shavings with a knife. Sprinkle the shavings with a little flour. Next, add all the butter to the flour. Mash well, mix with a fork, not with your hands, make crumbs.

2. Now divide the crumbs into 2 parts. Place one part on the bottom of the mold, and then pour the jam onto it. Pour the other part of the dough crumbs onto the jam. Do not press down anything with your hands.

Cooking with margarine

This option resembles a traditional cake. But there is a note in it that will give different tastes to this pie 😆 You can add mayonnaise, sour cream or kefir.

Experiment to get different flavors of this favorite pastry. According to my observations, it can be described this way: if you add sour cream - the dough will be very tender, mayonnaise - you will get a very crispy crust at the top, oh, how I love crispies :-), but if kefir - the dough will be soft and will remind you of a sponge cake. Therefore, choose what suits you best and cook.

We will need:

  • flour 400 g
  • margarine/butter 250 g
  • eggs 2 pcs.
  • sugar 1 cup
  • sour cream 2 tbsp (or kefir 2 tbsp, can also be replaced with mayonnaise - 2 tbsp)
  • baking powder 1 tsp.
  • jam/preserve

Cooking method:

1. Take margarine or butter. It will work better with butter. The oil will first need to be placed in a warm place for 40 minutes until it becomes soft. Next, add sugar and grind well until white.

2. Add spices to taste, it could be vanilla, cinnamon, cardamom, nutmeg or something else.

3. Add sour cream (kefir or mayonnaise) and gradually stirring, add flour along with baking powder. Knead the dough.

4. When the dough is ready, divide it into 2 parts.

Place one quarter in the refrigerator so that the dough hardens faster, make small thin cakes out of it.

5. For the rest, cover the bottom of the mold and make sides. Don't forget to grease the mold with vegetable oil.

6. Spread with jam or you can use jam.

7.And on top of the jam, grate the chilled dough from the freezer.

8. This is what it should look like.

8. Bake for approximately 40 minutes, depending on your oven. When you see an appetizing golden crust, consider it ready! The temperature should be approximately 180-200 degrees, and the oven should be preheated in advance.

9. Have fun baking your masterpiece! Bon appetit, friends!

2. Add salt to the flour and stir.

3. Now pour the resulting ingredients into the blender bowl.

4. Add oil there one by one. That is, first pour the resulting flour mixture, then butter, again flour, butter.

7. The result is crumbly.

8. Now place 2 eggs, a bag of vanilla sugar, and sugar in the mixer bowl. Whisk.

9. Now add the egg mixture to the crumb mixture.

12. Grate the apples. Grease a baking sheet with butter or vegetable oil.

13. Now take the dough out of the refrigerator and take a large piece and grate it onto the baking sheet. Crush the starch onto the dough, this is done so that when the apples give juice, the dough does not get soggy.

Lemon sweet pie

I think you will also really like this detailed version, as the lemon makes this yum even better.

I found this type on the Internet, watch this video and make this delicacy for your health:

Bon appetit!

Grated pie in a slow cooker

This type is made in the same way as the version of the classic delicacy in.

This dessert does not require additional oiling of the bowl. Place the dough base in the multicooker so that the bottom is completely filled and make small sides

Place, for example, currants and sugar on the dough and sprinkle with grated dough crumbs. Cook on the “Baking” mode for 40 minutes, and then keep it on the heating mode for another 20 minutes. Bon appetit!

1. This pie will turn out tastier and more tender if you use butter instead of margarine.

2. This type of flour product is prepared mainly with jam, so less sugar can be added to the dough.

3. Grease the baking pan with vegetable oil, not butter.

4. Our pie turns out to be very tasty, but also high in calories at the same time 👿. The calorie content of this pie is as follows: per 100 g - 371 kcal, proteins - 7 g, fats - 16 g, carbohydrates - 52 g. Therefore, if you are afraid of extra pounds, then eat a little, about 1 piece of this pie per day or at a time.

5. Be sure to preheat the oven in advance so that the dough does not turn out hard. And the crumbs, if you put them in a poorly heated oven or not at all, will spread.

6. If the jam is liquid, add starch or flour to it and then the pie will not run away. If you are against flour or starch, then you can cook the jam to a thick consistency on your stove. It is recommended to eat this sweet product when it has cooled down. Because the filling may spread due to the heat. Therefore, eat this dessert when it has completely cooled down.

7. Carefully check the weight of a pack of butter or margarine, because if you are cooking according to a recipe, it is important that the margarine or butter corresponds to the specified weight. I don’t know about you, but I often come across the fact that the package says 200 grams, but in fact, when I weigh it, it turns out to be 160 grams. Therefore, if you do not add butter, the pie will not turn out well or will not turn out to be shortbread.

8. Use a faceted glass with a rim, otherwise many people take any mug and then say that it didn’t work out.

What is the best way to serve this dessert with tea?

The shortbread pie is served after it has cooled in the pan. But it is better to cut it into pieces while hot, when it has not cooled down. If you start eating these baked goods while they are hot, the jam or berries may float. After cooling, it will become free-flowing and more tasty than when hot.

For beauty, you can decorate it with powdered sugar. Drink this sweet dessert with tea or coffee.

I think after reading this article, you will want to try different versions of this grated pie. Experiment with fillings. Feel like a master.

P.S. Last week I baked this pie again. It turned out very tasty, we ate it almost in one go.
