Ingredients:

How to cook meat zrazy with egg

The first thing you need to do is set the eggs to boil. And then you can move on to preparing the minced meat. I already had it scrolled. Minced meat can be made from any meat - beef, pork, veal or chicken. I have mixed chicken and pork. You need to add egg and onion to the minced meat.


If you don’t have a meat grinder, you can grate the onion on a fine grater by cutting a washed and peeled onion in half. I was prepared to shed a lot of tears, but it turned out that if I stayed away from the grater, holding my breath (in the literal sense of the word), there would be no tears. Don't forget to rinse your hands under cold water.


Place the onion in a bowl with minced meat, salt and pepper.


Mix. Unfortunately, it is impossible to mix the minced meat well with a spoon. In order for the zrazy to keep its shape, the minced meat must be kneaded almost in the same way as dough. That is, spoon for about 5 minutes, and then remove the minced meat from the bowl and throw it back. 3-4 times. Try to do this with force, but as carefully as possible so as not to splatter the minced meat around the kitchen. Then you need to close the bowl with the minced meat with a lid and put it in the refrigerator for at least half an hour - during this time a sticky protein will develop in the minced meat.


Meanwhile, the eggs had already boiled. They need to be filled with cold water so that they cool quickly. For now, chop the greens into smaller pieces.


We also cut the eggs quite finely. Mix with herbs and salt (a pinch is enough).


And the “X” moment has come. It's time to start sculpting zrazy. To make the job easier, prepare a bowl of water in advance. The minced meat does not stick to wet hands. And also have a plate of breadcrumbs ready. Let's get started! Rinse your hands in water, place 2 full tablespoons of minced meat on your left palm and flatten the minced meat into a flat cake so that it is thinner in the middle and slightly thicker at the edges.


Place two teaspoons of egg and herb filling in the middle.


Then with our right hand we wrap the edge of the future zraz in the same way as we do with pies.


And then we connect the edges. Rinse your right hand in water and smooth the surface of the eye. It turns out to be such a fairly large piece of minced meat with filling. If suddenly something went wrong the first time and the filling is visible from under the minced meat, do not despair. The situation is easy to fix. Take some minced meat and simply cover the “holes” with it, and then wet your hand again in water and iron the place where you put the “patch”.


Then carefully transfer the zraz onto the breadcrumbs. Take a wide plate so that you can sprinkle the zrazy on top and sides. Make sure that the breadcrumbs completely cover the minced meat.


Then you can place the prepared semi-finished products on the board without fear that they will stick. While we are making the remaining zrazy, the first ones will even have time to dry out a little, which will make frying them easier.


From the specified amount of products I got 6 zraz. The technology for their preparation is as follows: first they are fried in a hot frying pan on all sides. Pour in a lot of oil (yes, delicious meat zrazy with egg is not a dietary product). If you have a frying pan, like mine, with a thick bottom and a non-stick coating, then I fried the zrazy on it for 4 minutes on each side. During this time they managed to brown.


But that is not all. Due to their large size, zrazy must be stewed after frying. You need to pour a little water into the frying pan (level – 0.5 cm). Turn the heat down to low, cover the pan with a lid and cook for half an hour.


That's all. You can serve zrazy to the table.

So, 4 eggs (for two kilos of minced meat) are boiled, but not cut, but coarsely rubbed and mixed with two large spoons of softened butter. Zrazy are molded, laid out on a greased baking sheet and placed in the oven for half an hour. Then the sheet is removed, each cutlet is smeared with a teaspoon of mustard.
